Beetroot Cake


8 oz self raising flour

6 oz sugar

1.5 tsp baking powder

3 teaspoons mixed spice

8 oz soft margarine

2 or 3 beetroots, peeled and grated

4 eggs

1 tsp vanilla essence

  • Mix all ingredients well and put into a roasting tin lined with greaseproof paper
  • Bake at 180 c for 40 mins or until fork inserted in centre comes out clean

Potato IcingĀ 

  • mix icing sugar, butter, mashed potato and grated zest of 2 oranges and spread on cake
